Super yummy Vegan Tofu Bahn Mi
This tofu Bahn mi is a glorious Frankenstein of every recipe I've ever seen, cobbled together with what actually gets eaten in this house. 😂 It's got crispy tofu (because we can't be boring), a pickled veggie situation that's both tangy and sweet, and enough carrots and cilantro to make a rabbit jealous. 🐰
Recipe below, because sharing is caring :)
Here's what you'll need:
- Crispy Tofu: Marinate tofu in soy sauce, maple syrup, ginger, sriracha, garlic, sesame oil, sesame seeds and a splash of fresh lime juice. Pan-fry till golden brown.
- Pickled Veggies: Thinly sliced carrots, pickled in rice vinegar, sugar, and a pinch of salt. (Adjust sweetness to your liking, I prefer it very tangy to counter the sweet tofu)
- Spicy Mayo: Vegan Mayo + sriracha (or your favorite hot sauce).
- Baguette: Toasted for that extra crunch! (I personally love the artisan rolls from trader joe's).
- Toppings: Cilantro, jalapeños, cucumbers, sprouts, whatever your heart desires!
- Assemble and devour!
Seriously, pile on the toppings! Sprouts? Yes! Extra jalapeños? If you dare! This thing is basically a flavor explosion wrapped in a baguette. 💥 And the best part? It makes for a great kids school lunch!
