Humble Khichdi turns Superhero
Yields: 4-6 servings Prep time: 15 minutes Cook time: 13 minutes + natural pressure release
Ingredients:
- 1 cup brown rice, rinsed
- 1 cup quinoa, rinsed
- 1 cup sprouted mung beans
- 1 cup chopped celery
- 1 cup chopped carrots
- 1 cup chopped green beans
- 1 cup frozen peas
- 1 cup frozen corn
- 5 cups water (must cover an inch over all the vegetables)
- 1 tsp turmeric powder
- Salt to taste
- 1 cup chopped tomatoes
- 1 cup grated coconut
- 1 cup chopped fresh cilantro
- 1 green chili, finely chopped (optional, for mild heat)
- 1 tsp freshly ground black pepper
- 1 tsp cumin powder
For Tadka/Seasoning :
- 1 tbsp ghee
- 1 tsp cumin seeds
- 2-3 Kashmiri chili (adjust to taste)
- A generous handful of curry leaves
Instructions:

Prep:
- Rinse the brown rice, quinoa, and sprouted mung beans thoroughly.
- Chop the vegetables.

Instant Pot Cooking:
- Add the rinsed grains, vegetables, water, turmeric, and salt to the Instant Pot.
- Close the lid and set the valve to "Sealing."
- Cook on High Pressure for 13 minutes.
- Allow for a natural pressure release (NPR) for 20-25 minutes.

Finish & Garnish:
- Once the pressure has released naturally, carefully open the lid.
- Stir in the chopped tomatoes, grated coconut, cilantro, green chili (if using), black pepper, and cumin powder.
- Cover and let the flavors meld for 5-10 minutes.

Make the Tadka:
- Heat the ghee in a small pan.
- Add the cumin seeds and let them sizzle.
- Add the Kashmiri chili and curry leaves.
- Fry until the spices are fragrant.

Serve:
- Pour the tadka over the khichdi.
- Serve hot, garnished with fresh cilantro.
Tips & Variations:
- Adjust water: The amount of water may need to be adjusted depending on the type of rice and your preference for the consistency of the khichdi.
- Spice level: Adjust the amount of green chili and Kashmiri chili to suit your taste.
- Add-ins: Feel free to add other vegetables you enjoy, such as cauliflower, broccoli, or zucchini.
- Lentils: You can add a cup of any split lentils (like moong dal or masoor dal) for extra protein and flavor.
- Ghee: For a vegan option, you can use coconut oil or olive oil for the tadka.
